Hi, New to the forum and was wondering what would be an acceptable temperature variation across the entire surface of your cavity/core insert?

I think you mean the so-called Cooling Error J?
For crystalline plastics, the cooling error should be a maximum 2.5-5% and for amorphous plastics 5-10%
